How to make Ackawi cheese at home?

When I was younger, we used to live in the middle east and I remember one of my favorite middle eastern foods was manakeesh, especially the one with ackawi cheese. Ackawi cheese is a middle eastern, white brined cheese. I have looked all over the internet but haven't found a single post about how i can make ackawi cheese at home, and i can't find it any of the stores in my hometown. Can anyone please help me and give me a step-by-step method of making ackawi cheese at home. Thank you very much for your help.
