How would you clean stin from black granite surface?

It depends on the stain, there are various products available that are safe for granite. Stay away from acidic cleaners and vinegar they will ruin the sealant. If it's really bad or the granite was never sealed call a professional and they can buff it out. I have black granite countertops and the new 409 made for granite/stone works very well.
